Thus we have a built-in mechanism for determining whether or not the food we are eating still contains its enzyme content.”

It’s easy to see how easily the enzymes that are vital to good health are destroyed during cooking. Even dogs fed a raw diet are at risk of being enzyme deficient unless the dog is eating whole prey, including glands and entrails.
